• 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter (1 stick), softened
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup milk
  • 2 cups fresh or frozen blueberries


Heat oven to 450 degrees. Grease cups of muffin tin.

Combine flour, baking powder and salt in a bowl and set aside. In a large bowl with mixer at medium speed, combine butter and sugar until well-blended. Add eggs and beat until smooth.

Add flour mixture and milk, beating until well-blended. Stir in blueberries.

Spoon into muffin cups. Sprinkle tops with sugar.

Bake 5 minutes. Reduce heat to 375 degrees F and bake 30-35 minutes or until muffins spring back when lightly touched.
