Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cup white sugar
  • 3 tsp vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Instructions

Grease and flour two 8x4” pans. Preheat oven to 325 degrees F.

Sift flour, salt, soda, powder, and cinnamon together.

Beat eggs, oil, vanilla, and sugar in a large bowl. Add sifted ingredients and beat well. Stir in zucchini and nuts.

Pour batter into pans and bake for 40-60 minutes. Cool in pan for 20 minutes, then remove to cooling rack.
